Scrambled eggs are something that I make very often, always with some meat combination, of course. But sometimes I really try to give my best to make it a meal I’ll deeply enjoy.
This morning, I really wanted to eat those juicy, creamy scrambled eggs together with some other nutritional-rich food such as dry-cured pork loin, cherry tomatoes, and skyr.
So, I decided to share this simple, 10-minute recipe with you. I hope you’ll like it.
Ingredients You’ll Need

Ingredinet list for this recipe is extremely short. All you need is eggs, dry-cured pork loin, cherry tomatoes, skyr, and fresh parsley.
Ingredients for 1 person:
- 3 large eggs
- 15g (1 tbsp) butter
- 30g dry-cured pork loin
- 40g cherry tomatoes
- 100g skyr or something similar, such as Greek yogurt
- Few leaves of fresh parsley
- Salt and pepper to taste
Optionally, you can add a few slices of bread if you eat it. I went without it today. Also, I’m +100kg at the moment, and this meal made me full, so make sure to adjust accordingly.
You might need only 2 eggs and less pork loin if you’re lighter than me, or you’ll need more (even though I doubt it haha).
Equipment Needed
Luckily, you barely need anything for this recipe. All items needed you already have in the kitchen.

- Frying pan
- Spatula
- Bowl for mixing eggs
- Fork for mixing eggs
- Kitchen scale if you want to be extremely precise in counting calories
Step-by-Step Recipe
1. Whisk the Eggs

First thing first, get a bowl, crack three eggs and whisk with a fork until well combined.
It typically takes anywhere between 30 seconds and 1 minute to do so, unless you’re really working with dozens of eggs.
The important thing here is to NOT ADD ANY SPICES. You’ll do it when everything’s over.
2. Heat a Pan Over Medium Heat
Now, you should take your pan, turn the heat to medium, and heat the pan. If you use an electric stove top like I do, it’s around 5 out of 9.
You can also add the butter immediately to the pan and let it melt really slowly.
Wait until the pan is heated enough and until the whole butter is melted. Once it’s ready, just spread the butter all over the pan.
Unfortunately, I forgot to take a picture of this step, but you get the point.
3. Pour in the Eggs

Now, it’s time to finally pour in the eggs. This process will take a few minutes, expect anywhere between 5 to 7 minutes until the eggs are finished.
You should stir with the spatula constantly, without stopping. That will prevent eggs from overcooking on one part and help make them as juicy and as creamy as possible.
After all the liquid disappears, cook for a minute more, and the eggs are finished.

4. Serve the Eggs, Dry-Cured Pork Loin, Cherry Tomatoes, and Skyr

Now that the eggs are finished, you can transfer them to a plate, season with salt and pepper to taste, and then add the remaining ingredients.
If you want, you can chop some fresh parsley and put some over eggs and skyr to make it more appealing but also add some freshness to this meal.
In this step, you can use a scale to weigh everything, but I’ve done that step while the pan was still heating. The image below was taken when I was scaling everything:


Creamy Scrambled Eggs with Dry-Cured Pork Loin, Cherry Tomatoes and Skyr

- Crack the eggs into a bowl and whisk until well combined.
- Heat a pan over medium heat, about 5 out of 9.
- Add the butter to the pan. Once melted, pour in the eggs and cook, stirring constantly for about 7-8 minutes.
- The eggs are done when there’s no more liquid but before they become too firm to keep them soft and juicy.
- Transfer the eggs to a plate and season with salt and pepper. Optionally, add freshly chopped parsley on top.
- Serve the scrambled eggs with 30g of dry-cured pork loin, 40g of cherry tomatoes, and 100g of Skyr. If desired, enjoy with a slice of bread on the side.
